PREP: 20 MINS

COOK: 25 - 30 MINS

YIELD: 10 servings

Ingredients
The Fudgy Frosting

250g Salted Butter Room Temperature

2 cups Icing Sugar

 1/2 cup Sour Cream

1  cup Chocolate Chips

1 cup Cocoa  Powder

Ingredients

The Chocolate Cake

2 cups White Sugar

2 cups All Purpose Flour

3/4 cup Cocoa Powder

2.5 tsp Baking Powder

2 tsp Bicarb

2 Large Eggs

1 cup Full Cream Milk

1/2 cup Sunflower Oil

1 cup Boiling Water

2 tsp Nescafe Coffee Granules

1 tsp Vanilla Essence

Preparation Steps

01

Preheat your oven to 180°C. Grease and line 3 x 9-inch round pans with parchment paper to ensure an easy release after baking.

02

In a bowl, add sugar, flour, cocoa powder, baking powder, bicarb and salt.  Mix well until combined then add your eggs, milk, oil, vanilla essence and beat on medium speed until everything is evenly incorporated and smooth.  Do not overmix - you don't want your gluten strands to overdevelop.  You want a light, soft and tender crumb.

03

Add your boiling hot water and coffee granules then use a spoon to gently  fold into the mixture until just combined and smooth - The coffee enhances and intensifies the chocolate flavour, a match made in heaven.

04

Divide the batter into your tins and bake at 180°C for about 25 minutes, until a toothpick comes out clean.

05

For the Fudgy Frosting - Melt chocolate chips in a microwave, stirring every 10-15 seconds so it doesn't burn.  Set aside.  In your stand mixer beat the butter and icing sugar on medium speed until well combined, then turn speed up to high for 3-4 minutes until light and fluffy.  Add cocoa powder and beat on medium speed for 1 - 2 minutes.  Add your sour cream and melted chocolate and mix once more until smooth, well combined and fluffy.
